Want to try out Ben Stratton's Lentil Burgers?
You don't have to be vegetarian to enjoy them! Lentil burgers are one of his favourite dishes to cook as he finds them quick any easy, have a try.
1 cup Potatoes- cooked and mashed
1 tablespoon Curry powder
4 spring onions finely chopped
1/2 cup bread crumbs
1 x Egg (if vegan leave out the egg)
425g four bean mix (rinse and drain)
425g can brown lentils (rinse and drain)
Chillies- to taste
Salt and pepper to taste
Extra virgin olive oil to fry in
1 wholemeal roll per burger
Salad to fill- beetroot, lettuce, grated carrot.
Cook the potatoes, drain and mash.
Chop the spring onions and chilli.
In a bowl combine all the ingredients together
Form into patties.
Heat oil in pan and cook until golden brown
Serve on a toasted bun, with a tasty chutney and salad!

The lentils and beans provide a great protein source together with carbohydrate for recovery and refuelling all in one. The iron and magnesium in the legumes are amongst two other important minerals an athlete and everyone needs.
The bun is a good quality high fibre bread and together with the salad plenty of antioxidants for muscle repair and to boost his immune system this is a great healthy meal Ben chooses!
