It can be hard to find a nourishing snack, to go with a coffee or cup of tea or to have for recovery after exercise. Here is one a friend shared with me. Her family look forward to this muesli slice in their lunches. If dark chocolate is added to the bottom, it is like a delicious Florentine. read on for the recipe and to see why this is so nutritious!
As it contains nuts, it might not be suitable for taking to primary school, due to nut allergies. It could be enjoyed at home, and a stash in the training bag.
Dietary Fibre: The slice is packed with dietary fibre, from the seeds, nuts, oats and fruit. Many of us don't have enough, we should be aiming to around 30g of dietary fibre per day.
Protein: The nuts and seeds provide protein. It can be tricky to find protein snacks that don't need refrigerating.
Carbohydrates: There is a mix of carbohydrates in this snack, from the oats, honey, condensed milk and dried fruit. Together with the high dietary fibre, fat and protein, the carbohydrate will be released more gradually than if eating these ingredients alone.
Healthy fats: The mix of nuts give a boost of mono and poly unsaturated fats, particularly good for our heart and to aid absorption of fat soluble vitamins, like vitamin E, that nuts and seeds contain.
Omega 3's: The chia and flax seeds, give a good boost of omega 3 fatty acids. Might be useful for brain function when at school or work!
Here is the recipe, for you to have a try. Let me know of your own variations!
500gm unsalted mixed nuts
1/2 cup of almonds
1 cup of rolled oats
1/2 cup of cranberries
1/4 cup raisins or sultanas
1/4 cup chia seeds/flax seeds
1 cup of special K (optional)
1 pkt choc dark melts (optional)
1 can skim condensed milk
(If using dark choc, melt first and spread onto tray and chill until hard)
Dark chocolate (optional). You can line the bottom of the tray with melted dark chocolate
MIX INGREDIENTS ALTOGETHER AND POUR INTO A BAKING TRAY, EASY!
Bake for 20minutes on 180 degrees Celsius.
When cooled, slice and store in the fridge.
Cut into squares. Makes 36 delicious, nutrition packed serves.
