My Kangaroo mince 3 in 1 creation
It is great when you can find a recipe that can be modified easily to make, a different meal. Time saver and keeps the excitement of dinner alive.
This is an easy, economical recipe, packed with lean protein and plenty of vegetables!

1kg kangaroo mince
1 onion finely chopped (or use infused oil if FODMAP issues & for the garlic)
2 cloves garlic chopped finely...
400ml pasata or 425g can tomato puree
About 2 tablespoons of Worcestershire sauce
Salt and pepper to taste
Paprika to taste
1 chilli finely chopped (optional)
2 cups mixed frozen vegetables (carrot, peas, cauliflower stalk mix... yep stalks...l thought it was potato at first!)
Fry onion and mince in extra virgin olive oil until brown.
Add all other ingredients and simmer for 20 minutes.
1. PARCELS/pasties: using filo or puff pastry fill with the mince mix and cook in a hot oven for around 20minutes or until pastry is golden. Freeze extras.
2. MEXICAN: Serve with rice, in burritos or on sweet potato or potatoes. Add a can of kidney beans to the mince mix and some extra spice if you like.
3. PASTA: use as a bolognese style replacement or even as a lasagna sauce.
